Pumpkin Bread

Makes 1 loaf

7.5 oz White Sugar
7.5oz Light Brown Sugar
4 oz Olive Oil
2 Whole Eggs
1 Egg Yolk
13 oz Canned Pumpkin
2 ½ cups All Purpose Flour
1 ½ tsp. Baking Soda
1 tsp Ground Cinnamon
½ tsp Salt
¾ tsp Ground Ginger
¾ tsp Ground Cloves
½ tsp Ground Nutmeg
¼ tsp Ground Black Pepper
3 oz Water

Directions

  • Place eggs and oil in blender; blend until emulsion forms.
  • Add white and brown sugar; blend until fully incorporated (about 3 minutes).
  • Add pumpkin puree; blend until fully incorporated (about 3 minutes).
  • Mix together flour, salt, cinnamon, cloves, ginger, pepper, nutmeg, and baking soda. Sift all ingredients together.
  • Add 1/3 of the water; add 1/3 of the flour mixture. Repeat until all are completely mixed together
  • Spray loaf pan with pan spray, then dust with flour.
  • Place batter in pan.
  • Cook in 325° oven for 30 minutes. Check and rotate pan.
  • Continue cooking for another 30 minutes; check and rotate.
  • The bread is done when it appears to be light brown in color and you can insert a toothpick to the center and it comes out clean.
  • Remove from pan immediately, and place on cooling rack.
